About THE SCHOOL

The Bisbee Cooking School was created by a professional chef who loves to teach. The school is for anyone who is interested in food and wine. Most classes require no previous cooking experience. We teach the basic techniques needed. Classes are held in a fully equipped home-style kitchen preparing dishes that you can make yourself.

Each hands-on class includes creative and exceptional recipes, demonstrations and the special background and ingredients of the region or type of cooking. The class concludes with a sit down meal complete with the appropriate wine or other beverage. Prices include all materials. Classes are generally limited to eight students.

The keynote of all our classes is having fun while doing hands-on learning. The native foods of the Southwest, its herbs and vegetables, are the starting point for our creation of distinctively modern cuisine, be it traditional French or New Southwest.

About the Chef

Helen Saul has been a professional chef for over 25 years. A self-taught cook, she has studied with New Orleans’ Chef Paul Prudhomme, and Marcella Hazan. Her love of ethnic cuisine has led her to take cooking classes in Oaxaca and Merida Mexico, Bali Indonesia, and Florence Italy.
     Helen still caters private dinners having started her original catering company in San Francisco in 1978. After moving to the Oregon Coast she was a sous-chef for four years before opening her own restaurant, the acclaimed Alsi Bistro, specializing in Pacific Rim cuisine. She has also cooked special dinners for High Desert Cafe in   Bisbee, AZ.
    Helen taught many popular cooking classes for Oregon Coast Community College, including Italian Regional Cooking, French Provincial Cooking, Cajun Creole Cooking, and the New American Cuisine.
    She became a member of the American Culinary Federation in 1994 and was a co-founder of the Bay Area Women’s Wine Tasting Society. She has been a menu consultant for new restaurants and a wine consultant for both restaurants and retail stores. After moving to Bisbee in 1999 she decided to start her own cooking school in order to pursue and share with others her longstanding love affair with regional cuisine.
