     Helen Saul has  spent time in  both the Yucatan and Oaxaca Mexico studying and becoming familiar with the cooking of the regions. She hopes you will enjoy being introduced to these exciting cuisines.

      The cooking of regional America continues to be a fascinating exploration and  we will be offering classes in both the Native and New cuisine of the  Southwest.                                                                                      We have also been exploring the historical menus and recipes of the Grand Cuisine of the turn of the 19th century and will offer some very exciting classes in what are the roots of contemporary American cooking.

CLASSES - Summer-Fall  2011

All Classes are limited to eight students and are hands on.  Every one cooks.

CONTEMPORARY NEW ORLEANS                You will learn how New Orleans chefs are recreating traditional cajun/creole classics.  This is bold, creative cooking.
                                                                                                                                                                                                                                  

THE CREATIVE VEGETARIAN         Classical approaches to creating  wonderful vegetarian dishes for a complete dinner. With a tasting of  wines that go well  with vegetarian cuisine.

SOUTHWEST VEGETARIAN  - Learn how to prepare vegetarian food that is both exciting and utilizes native Southwest ingredients. We will include cactus and acorn and more. 

OAXACA COCINA                                

Home of the Seven Moles  and one of the best cuisines in North America. Special techniques,  a classic mole negro and a       traditional Oaxacan meal. 
 
THE MAYAN KITCHEN      

     The food of Yucatan Mexico is quite different from that of the rest of Mexico.  We will introduce you to the special ingredients and cooking methods of this not hot cuisine.

TRADITIONS OF AMERICAN COOKING                            Bohemian San Francisco   

      A trip into a gourmet mecca of yesteryear with recipes from the finest San Francisco restaurants at the turn of the 20th century.

THE THRIFTY GOURMET - Creative and delicious meals on a budget come from various regions. We will explore these and create a wonderful low-cost dinner you could even serve to guests. You will go home with many new ideas for great food on a budget.

Cost of all classes $48 per person.

Includes meal with wine, all materials, and recipes.

Invite a partner to dine with us if  s/he doesn't want to take the class.  $24.  Must sign up ahead.
